Potato Fish Cakes with Pomegranate Salad

We decided to go a different tack with fish cakes. Rather than the thai style fish cakes, which has no potato in it, we thought we'd try a fish cake made with potatoes this time.

It turned out quite nice. We served them with a simple Summer salad.

So this is how it turned out...

Dressing for the salad was made with this Korean plum sauce.
I think it also had garlic, apple cider vinegar, olive oil... and I'm not sure what else.
But.... I could be very very wrong here (because I didn't make it :Þ)

Here's the salad, it has green beans, tomatoes, parsley, coriander, cucumber and pomegranate seeds

It just looks so darn good all thrown together on a plate


So what's in this fish cakes, you ask?
Well, leatherjackets (the fish, not the item of clothing) gently poached in milk and flaked, mashed potatoes, a variety of herbs cos we love herbs, crumbed in panko and shallow fried.

Pure awesome.
