I know, this is the 2nd time in a week we've had this meal, but how can you resist cold soba? And you definitely cannot resist seared scallops!
And when it's a hot day, this is the kind of simple tasty meal you want to prepare quickly.

We served it with leftover risoni salads. This was the first one, risoni with pumpkin |

And cheat's version of baked carrots. I made this by microwaving the carrots for about 2mins, then finishing it off in a frypan with some oil and butter. When they were brown, I added apricot conserve mixed in a little water (rather than using honey), and also some dill.
It was all topped off with some cooked onion and dill (because I had leftover diced onions, not because I'm all fancy and stuff)

And how the meal looks in its entirety. We also had a very sad look leek in the fridge, so I cooked that up with some butter and nothing else. Not even salt. Vegies are amazing like that.
The noodles and scallops were finished off with a lemon, soy, honey, ginger, garlic dressing. Perfection. |
